Wheatgrass + Spirulina Wraps with Hummus + Veg

Ingredients

  • 1 can chickpeas
  • Juice of 1 lemon
  • 2 peeled garlic cloves
  • 1-2 tbsp tahini (just leave out if you have a sesame allergy)
  • 1-2 tbsp olive oil
  • Salt (we like pink Himalayan salt)
  • Ground black pepper
  • Optional extras
  • 1 tsp cumin seeds
  • 1 tsp ground turmeric 

The filling

  • 1 courgette, sliced into thin strips 
  • Handful asparagus tips 
  • 2 tbsp olive oil
  • Pumpkin seeds 
  • Handful rocket 
  • 1. Add the courgette and asparagus to a large griddle pan or frying pan with the oil, and cook on a medium heat for about 5 minutes. Keep flipping them over so that they’re charred on both sides. 

To make the wraps

  • 1 cup gram flour 
  • 1 tsp wheatgrass powder
  • 1 tsp spirulina powder
  • 2 tbsp olive oil
  • 1 tsp apple cider vinegar 
  • 1/2 tsp baking powder 
  • 1 tsp fennel seeds 
  • 1/2 tsp sea salt 
  • 1 cup water 
  • Black pepper 

Method

To make the hummus

  1.  Put the chickpeas in your food processor, followed by the garlic, lemon juice, tahini, and olive oil. Blitz until smooth and creamy (about 2 minutes), then add a little water to loosen.
  2. Season to taste, plus add any additional spices, such as cumin and/or turmeric, and blitz again.
  3. Pre-heat a frying pan so that it’s nice and hot.
  4.  In a bowl, mix the flour, oil, vinegar, baking powder, fennel seeds and salt and pepper, then add the water. Mix well to form a batter before dividing into two bowls.
  5.  Add 1 tsp of spirulina to one of the bowls, and the wheatgrass to the other. Stir throughly to combine. 
  6. Add a little oil to your pan, then pour in half the batter from one of the bowls. Cook for a couple of minutes, and when you can see bubbles forming on the surface slide a spatular underneath the flatbread. The flatbread shouldn’t stick (if it does, leave it for another few seconds). Flip the flatbread over and cook on the other side for a couple of minutes until cooked through and a little brown. Repeat three times. 

To serve

Lay out the flatbread, slather on the hummus, then add the roast veg, pumpkin seeds and rocket. Fold into a wrap, and enjoy!
